[SINGAPORE] HILL STREET TAI HWA PORK NOODLE 吊桥头大华猪肉粿条面 – Lavender

It’s definitively a marker in food history when the Michelin Guide award two Singapore hawkers a star. Besides Liao Fan Hawker Chan, Singapore’s favorite Bak Chor Mee from Hill Street Tai Hwa Pork Noodle also given one star in Singapore Michelin Guide 2016.

Hill Street Tai Hwa Pork Noodle is a street food stall in Singapore. They are famous for its pork noodle, also known as Bak Chor Mee (aka minced pork and noodles), a true Singaporean dish. It is owned and run by Tang Chay Seng and today it’s run by the 2nd generation of the family but the consistency of the quality has been there all the time. The stall started back in 1932 at Hill Street, moving to Marina Square in 1986 before settling down at Crawford Lane since 2005.

Tai Hwa is a self-service stall and notorious for its queues, it can take as long as an hour or even more during the peak lunch hour. When we visited them, we have to queues for almost 2 freaking hours! As you are about to reach the front of the queue, a store assistant will take your order. You have a choice of the S$ 6 bowl or more expensive ones at prices up to S$10 per bowl. You can opt for the dry or soup version and can choose the type of noodles. You may specify your preference for the amount of chili and vinegar and make other special requests or you can order an extra bowl of dumpling soup. Wait for another 10 to 15 minutes and your order will be ready. There is no effort to dress up the place. It is functional. There are tables and chairs and you don’t need anything else.

The main ingredients are egg noodles, a vinegar based sauce, chili oil, tender pork and liver slices, minced pork, pork crackers, dumplings, wontons and fried sole fish, and of course the broth. In other words, real comfort food where the magic lies in top ingredients with a mix of textures and cooking skills far beyond the ordinary.

We opted for a small bowl of dry noodles (S$ 6) and the first thing we noticed was that they could be quite extravagant with the ingredients. Though we think the cheapest version of S$ 6 is not that far off in terms of a number of ingredients than Medium (S$ 8) or Large (S$ 10) portion. The egg noodles are slightly thicker with a more biting result. The minced pork and the meatballs are very good, as are the other ingredients are thrown into the bowl, including the fried sole that gives the dish a crunchy texture.

Overall, Tai Hwa’s Bak Chor Mee was really better than the average noodles you get at the hawker center. Is it so good that I would stand in line for an hour to have it? I do not think so. There are several other places in Singapore where you could have bak chor mee which would be almost as good as Tai Hwa. Nevertheless, judging by the consistent queues at Hill Street Tai Wah Pork Noodle, it would seem that many would readily agree that Tai Hwa’s version of Bak Chor Mee is a definitely a must-try hawker food in Singapore.

How to getting there:
Take exit A of Lavender station towards the Immigration & Checkpoint Authority (ICA). Once up the escalator, turn left towards the small canal. Cross the bridge to other side and then look for Block number 466. This stall is located inside an old fashion Singapore style “coffeeshop”. If you find the Block 466, you won’t miss the coffee shop nor the queue for the pork noodles. It’s 5-7 mins walk from MRT exit.
