Indonesian cuisine is one of the most vibrant and colorful cuisines in the world, full of intense flavor. With more than 300 ethnic groups and foreign influences, Indonesia has tons of traditional recipes include rice, noodle, and soup dishes.
Featuring Indonesian traditional cuisines, Talaga Sampireun & Bumi Sampireun, which is two of my favorite Indonesian restaurants, are always stay consistent and keep a commitment to preserving Indonesian culinary. And this time, they’re in collaboration with William Wongso, who is a culinary expert from Indonesia to create the new menu Kuliner Nusantara ala William Wongso.
The launching event was held at Talaga Sampireun Bintaro on last Saturday, 17th November 2018. There are 5 menus of Kuliner Nusantara ala William Wongso is taken from Flavors of Indonesia, a beautifully illustrated Indonesian cookbook, culinary guide and, cultural exploration written by William Wongso himself. There are Ayam Tangkap Aceh, Gulai Ikan Patin, Gadon (Pepes Daging), Dadar Pegagan, and Nasi Minyak Batanghari with Daging Masak Hitam.
Choosing that five from tons of Indonesian dishes is certainly not an easy thing. William Wongso explained that this selection is based on the priority of cuisine from better-known regions in Indonesia such as Aceh, Jambi, Bangka, Melayu, and Jawa. I’m so glad to have the opportunity to try all these 5 menus and share my experience with all of you. So here’s the review.
Ayam Tangkap Aceh
Originated from Aceh, Ayam Tangkap is Indonesian fried chicken with spices and herbs and it’s very popular with the local. Pieces of chicken are marinated in spices and then fried and served with piles of fried aromatic leaves and a side of sambal. Even it looks with a “messy” appearance, but I love munching on those crunchy aromatic fried herbs.
Gulai Ikan Patin
Sumatra has a lot of delicious traditional foods, one of them is Gulai Ikan Patin. It’s a popular local culinary in Riau and Jambi and one of the best foods among Minangkabau and Malay people. The food includes coconut milk and its characteristic is the spicy taste. Gulai Ikan Patin is indeed spicy because Sumatrans love spicy foods. As for Talaga Sampireun’s version, I like it so much since the soup is thick and flavorful while the fish is really fresh and has a soft and delicious meat.
Nasi Minyak Batanghari with Daging Masak Hitam
Nasi Minyak is a popular aromatic rice in Jambi, which cooked with ghee, herb, and spices. It’s similar to Nasi Lemak, but the difference is, the way of making Nasi Minyak is the most complicated compared to another aromatic rice in the world. As William Wongso said, Nasi Minyak is cooked with 10-12 herbs and spices, and the spices are not pounded as usual, but boiled into the tea and then used to cook the rice with additional ingredients such as pineapple, tomato, and ghee.
Nasi Minyak Batanghari is paired with Daging Masak Hitam, which cooked without coconut milk, but with grated coconut which is roasted to black. It’s more like Jambi version of Rendang. The rice itself is fragrant and bold of herb and spices flavor. It tastes like nasi kebuli and very well combined with Daging Masak Hitam.
Gadon
Indonesian food is never complete without Javanese food. William Wongso and Talaga Sampireun choose Gadon to represents Javanese traditional culinary. Gadon is made up from minced meat and steamed in banana leaves. To be honest, I don’t really like Gadon but if you like pepes (Indonesian cooking method using banana leaf as food wrappings), you should be love this one.
Dadar Pegagan
The last menu is Dadar Pegagan, which is chosen so it can be enjoyed by kids. Pegagan is a natural ingredient plant and it is native to wetlands in Asia. Even Pegagan is called prime food in Sri Lanka and India. The combination between Pegagan and egg resulting in a yummy omelet and it tastes savory because it uses duck eggs.
Overall, from all 5 new menus of Kuliner Nusantara ala William Wongso is well executed. Not only the flavor, but the menu selection is also very good, ranging from rice and soup dishes, consists of fish, chicken, and beef. It’s almost perfect and I have to say that Talaga Sampireun doing a great job to bring the Indonesian traditional culinary to the next level.
