In the previous post, I have reviewed about 2 Michelin-starred hawker stalls in Singapore, Liao Fan Hong Kong Soya Sauce Chicken Rice and Hills Street Tai Hwa Pork Noodle. And on my #FoodInLoveSINGAPORE trip earlier this year, I’ve tried another Michelin-starred restaurant and the only one Biryani restaurant with three-time Michelin Bib Gourmand award-winner, Bismillah Biryani restaurant.
Bismillah Biryani located at 50A Dunlop Street in Little India serves up Dum Biryani and other authentically cooked Pakistani and North Indian cuisine. The place is quite spacious with “Probably the best Biryani anywhere” printed on their signboard. There’s a humble interior without air-con on the ground floor, but if you’re looking for a fancier and comfier place, they also have an air-con room on 2nd floor.
The restaurant’s signatures include the regular Chicken Dum Biryani (SGD 9.00), Kid Goat Biryani ($15), Lamb Shank Biryani ($20.00), Grilled Fish Biryani (SGD 12.50), Vegetable Biryani (SGD 8.50), and Tandoori Chicken Biryani (SGD 15.00). And for this time I opted for their Chicken Dum Biryani.
Chicken Dum Biryani
In case you are curious about the “dum” in the name of the dish, it means sealing after all ingredients are placed in a cooker, then cooked on a low flame. The process is supposed to intensify the flavor. As mentioned in the poster on the wall, there is no gravy / dalcha served with their Biryani. Instead, you get a dry and flavourful version if Biryani comes with a bowl of raita (yogurt sauce) as they care about your health and strive to cook the least unhealthy meals possible.
As you can see in the photos, their version of Biryani is different from what most other places serve. It’s not oily-orange colored rice drenched but the basmati rice was flavourful, as the meat was cooked together with it rather than separately, additionally coated with strong spices. It seems they use a lot of dry spices in this biryani. Found lots of peppercorns, star anise, cloves etc in the rice and I guess that’s where it comes from.
The chicken is very tender and juicy, it tastes more like grilled chicken. There is no doubt that their cooking method must be really solid because the meats here are really tender, well cooked, drop off the bones, and flavourful.
Overall, Bismillah Biryani serves an authentic Dum Biryani in a unique way unlike the others do. It tastes good, but to be honest, it may not have been the best biryani I’ve ever had nor the worst tasting one either. This may very well be authentic biryani according to some people, but if you ask me for the best Biryani in Singapore, I would recommend you to try the one in Sakunthala Restaurant, which is also located in the same neighborhood.
