As many people said, there are always one or two good food stalls in any food centers in Singapore. The stall with long queues are the better ones. Walking through Albert Food Center in Bugis area, the stall you’ll likely see with a winding queue would be this Yong Tau Foo stall.
On my recent #FoodInLoveSINGAPORE, I was in Bugis walking around and we stumbled upon Albert Centre Market & Food Centre. I took a walk and found Bai Nian Niang Yong Dou Fu. It was easily the busiest stall in the building, with a long line of people waiting for bowls of their soup.
What’s so special about their Yong Tau Foo that people are willing to queue for it? According to their facebook, they hand-make their YTF freshly at the stall; and the soup has no MSG. I wonder if they can still maintain their artisanal model of handmaking food since they are expanding so quickly.
They only sell their Yong Tau Foo in a fixed set and they use bee hoon or vermicelli so you cannot choose the ingredients. All the Yong Tau Foo items in every order are set, no alterations. Still, that doesn’t deter the immense popularity of this stall as the lunchtime queues can be insanely long.
A regular bowl of Yong Tau Foo comes at a price of SGD 4.50, with a total of seven pieces of delicious Yong Tau Foo and a generous amount of bee hon. In it, you can find prawn ball, pork ball, bitter gourd, beancurd, white, black and gold beancurd rolls stuffed with pork, fish, prawn and squid filling. All these are freshly made and cooked on the spot. Each of these ingredients boasts a great emphasis on quality.
Firstly, the bee hoon itself was of premium quality; I could tell just by how springy it felt. The highlight among the various ingredients is actually the prawn roll that is made from tiger prawn flesh. It has an enjoyable bouncy texture.
You can truly appreciate everything in the bowl. The prawn, pork, and fish rolls were all well-seasoned, and sufficiently tender. They come in bite-sized pieces, rather than huge chunks, making them easy to eat. Soup is light but full of flavor in every sip, no MSG added and yet superior in taste.
The pork is fan-freaking-tastic. It’s so sweet and fatty and there is a nice crunch from black fungus, which also gives an added boost of umami. The prawn ball (actually they are more like prawn cylinder) is made from minced fresh (not frozen) tiger prawn meat; it is also amazing, such great texture. I also like this fish wrapped with beancurd skin that I haven’t eaten anywhere else before, or maybe I have but the taste is so refreshing and sweet that it comes across as something totally new.
A real good Yong Tau Foo, besides the use of quality ingredients, features a soup with the perfect sweetness and flavor and complemented by good chili and sweet dipping sauce. The soup itself is light and tasty. It tasted healthy (you know, the “clean” kind), but full of flavor, and paired excellently with the fine bee hoon.
One last thing I want to say is their sauces. Their sweet sauce, made from fermented bean curd and sweet soy sauce, is just ok for me, but their chili is very spicy and I love it. They make the chili freshly at the stall so you can really taste the freshness of the chili, with a super strong garlic taste, which I love.
What I like is the taste of the meat. It is well marinated and the taste is really good. Same goes to the prawn paste, each and every bite can taste the freshness of the prawn. It is marvelous. Everything is so delicious. The soup, made from dried anchovies and soybean, was light, refreshing, and sweet.
Besides the palatable bowl of Yong Tau Foo, do not miss out on the fried chicken wings (SGD 6) from Bai Nian Niang Dou Fu. Boasting perfectly crisp fried skin, the offering of fried chicken wings may seem to be contrary to the presumably healthy Yong Tau Foo, however, we know it is hard to resist an order of this delectable snack.
The chicken wings and the chicken drumettes are well marinated and freshly fried when ordered. I like the honesty that I get 4 drumettes and 4 wingettes. Some stalls probably only get you 2 of each, which is actually only 2 chicken wings. Over here, you get the 4 whole chicken wings for SGD 6. The wings are big and juicy too. I can taste five spices in the crispy batter, which is quite flavourful. However, the crust from the batter is a bit too tough.
Overall, Bai Nian Niang Dou Fu deserves to be considered one of the best Yong Tau Foo in Singapore. Quality and meticulous in each piece of work, it should be the new defined standard and benchmark for all good Yong Tau Foo. Don’t forget the fried chicken wings, it is just irresistible. Will I come back in the future? Well, I won’t queue for them, but if the stall is empty, I’ll definitely eat the Yong Tau Foo here!
